Lately, I've been really into sandwiches, so today I would like to share some of my favorite lunch sandwiches with everyone. I found a ton of sandwiches on Pinterest and these are some of my version. I tend to simplify them a lot because I don't have time to prepare extravagant sandwiches.
My first favorite is this amazing turkey sandwich:
Ingredients:
2 slices of turkey meat (Cub Foods, about $4 per lb)
1 avocado (a bag of 4 at Trader Joe's is $3)
A handful of organic spring mix salad (Cub Foods, $4)
2 slices of whole wheat bread
Chipotle hummus (Trader Joe's, $3)
All
you have to do is spread the chipotle hummus (you can use any kind of
hummus) on the slices of bread and pile up all the ingredients! It's so
good, and the best part is that it's healthy! I never feel guilty after
eating this.
My second favorite is the most simple sandwich there is - a peanut better and banana sandwich!!!
Ingredients:
2 slices of whole wheat bread
1 banana (cheapest bananas I found are at Sam's Club)
Crunchy peanut butter spread (I used Jif all natural peanut butter)
If you've never tried banana and peanut butter together before, please do! I just love the combination, although my boyfriend thinks it's weird. But he's a carnivore, and he refuses to try it, haha.
Lastly, my third favorite is this amazing meatless sandwich:
Ingredients:
2 slices of whole wheat bread
1 avocado
2 slices of tomato
A handful of spinach
Chipotle hummus
A pinch of salt & black pepper
I put this sandwich together about a year ago when I went meatless for a month. It's so delicious, and I never ever feel guilty after indulging it. That's it for today, and this post made it right in time for lunch! I hope you try these simple yet flavorful sandwiches, and please let me know what you think.
